Fry the Tortillas
Heat vegetable oil in a large skillet over medium heat. Cut corn tortillas into quarters and fry them until they are crispy and golden brown. Remove from oil and drain on paper towels.

Prepare the Sauce
In the same skillet, add the red or green enchilada sauce and heat until simmering.

Combine Tortillas and Sauce
Add the fried tortilla pieces to the skillet with the sauce. Toss to coat the tortillas evenly with the sauce.
Toppings and Serving

Add Toppings
Sprinkle the shredded cheese and carne asada over the chilaquiles. Allow the cheese to melt slightly.

Serve
Plate the chilaquiles, top with sour cream, queso fresco, and fresh cilantro if desired. Serve with over-easy eggs and a side of refried beans.
