Marinate the Pork
In a large bowl, combine the minced garlic, soy sauce, vinegar, brown sugar, black pepper, and bay leaves. Add the cubed pork calf and mix well to coat. Cover and marinate in the refrigerator for at least 4 hours, preferably overnight.

Simmer
Add the reserved marinade to the pot and bring to a boil. Reduce the heat to low, cover, and let it simmer for about 1.5 hours, or until the pork is tender. Season with salt to taste.

Prepare Rice and Beans
While the pork is cooking, prepare the rice according to package instructions. Heat the cooked beans in a separate pot until warmed through.

Once the pork is tender, serve it hot alongside the cooked rice and beans.
