Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.

Combine Mixtures
Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the grated carrots and nuts.

Bake the Cake
Divide the batter evenly between the prepared cake pans and smooth the tops. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

Cool the Cakes
Allow the cakes to cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.

Prepare Cream Cheese Frosting
In a bowl, beat together 8 oz of cream cheese, 1/2 cup of butter, 4 cups of powdered sugar, and 2 tsp of vanilla extract until smooth.

Frost the Cake
Once the cakes are completely cool, spread a layer of cream cheese frosting on top of one cake layer, place the second layer on top, and frost the top and sides of the cake.

Serve
Cut into slices and serve with a scoop of ice cream if desired.
