Cooking Instructions

  1. 1

    Prepare the Pinto Beans

Soak the pinto beans in water overnight. Drain and rinse the beans before cooking.

  2. 2

    Cook the Bacon

In a large pot or Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the drippings in the pot.

  3. 3

    Brown the Steak

Cut the flank steak into bite-sized pieces and season with salt and pepper. In the same pot, brown the steak in the bacon drippings until all sides are seared, about 5-7 minutes.

  4. 4

    Add Ingredients

Add the soaked pinto beans, chopped onion, and enough water to cover the ingredients. Bring to a boil.

  5. 5

    Simmer the Soup

Reduce the heat to low and cover the pot. Let it simmer for 2-3 hours, or until the beans are tender and the steak is cooked through.

  6. 6

    Finish the Dish

Crumble the cooked bacon back into the pot and stir. Adjust seasoning with salt and pepper as needed.

  7. 7

    Serve

Serve hot, garnished with diced onions, chopped cilantro, lime wedges, and warm tortillas on the side.
