Prepare the Chicken
Season the chicken thighs with salt and black pepper. Heat olive oil in a large skillet over medium-high heat. Add the chicken thighs, skin-side down, and sear until golden brown, about 5-7 minutes. Flip and cook for an additional 5 minutes. Remove the chicken from the skillet and set aside.

In the same skillet, add garlic and sauté for 1 minute until fragrant. Pour in the white wine, scraping up any brown bits from the bottom of the skillet. Add the chicken broth, lemon juice, and rosemary. Bring to a simmer.

Return the chicken thighs to the skillet, skin-side up. Add the capers and reduce the heat to low. Cover and let simmer for 25-30 minutes until the chicken is cooked through and tender.
