Prep and Cook Salmon

Prepare the Salmon
Preheat your broiler. Place the salmon fillets on a baking sheet lined with parchment paper. Drizzle with olive oil, lemon juice, and season with salt and pepper.

Broil the Salmon
Broil the salmon for about 8-10 minutes, or until cooked through and flaky.
Make Olive Pesto

Blend Ingredients
In a food processor, combine Kalamata olives, parsley, garlic, Parmesan cheese, and olive oil. Blend until smooth. Adjust seasoning if necessary.
Prepare Mashed Potatoes

Cook Potatoes and Garlic
Boil potatoes and garlic cloves in salted water until tender, about 15-20 minutes. Drain well.

Roast Asparagus

Roast Asparagus
Toss the asparagus with olive oil, salt, and pepper. Spread on a baking sheet and roast in the oven for about 10-15 minutes until tender.
Plate and Serve
