    Caramelize the Onions

    In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 30-40 minutes.

    Add Broth and Wine

    Once the onions are caramelized, add the white wine to deglaze the pot, scraping up any browned bits. Then, add the beef broth, thyme, bay leaves, salt, and black pepper. Bring to a simmer.

    Simmer the Soup

    Allow the soup to simmer for at least 20 minutes to meld the flavors. Adjust seasoning as necessary.

    While the soup is simmering, slice the baguette and toast the slices until golden brown.

    Ladle the soup into oven-safe bowls, place a slice of toasted baguette on top of each serving, and sprinkle generously with Fontina cheese. Place under the broiler until the cheese is bubbly and golden brown.
