Winemaking Process

    Harvesting the Grapes

    Pick ripe Sangiovese, Cabernet Sauvignon, and Merlot grapes in Tuscany, ensuring they are healthy and free from mold.

    Crushing and Destemming

    Destem and crush the grapes to release the juice. This can be done manually or with a grape crusher.

    Fermentation

    Transfer the crushed grapes into a fermentation tank. Add yeast and sulfites to initiate fermentation. Allow to ferment for 7-10 days at controlled temperatures.

    Pressing

    Once fermentation is complete, press the grape mixture to separate the liquid wine from the solids.

    Aging

    Transfer the wine into barrels for aging. Allow it to age for 12-18 months, depending on desired flavor profile.

    Bottling

    After aging, filter and bottle the wine. Allow it to rest in bottles for several months before release.
