Making the Ravioli

Prepare the Dough
In a large bowl, combine the flour and salt. Make a well in the center and add the eggs and olive oil. Gradually mix the flour into the eggs until a dough forms. Knead for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Make the Cheese Filling
In a mixing bowl, combine ricotta, fresh mozzarella (chopped), Parmigiano Reggiano, Pecorino Romano, egg yolk, black pepper, and salt to taste. Mix well until all ingredients are thoroughly combined.

Roll Out the Dough
Divide the dough into four portions. Roll out one portion on a floured surface until thin (about 1/16 inch). Keep the remaining dough covered to prevent it from drying out.

Fill the Ravioli
Place small spoonfuls of the cheese filling about 1 inch apart on one half of the rolled-out dough. Fold the other half over the filling. Press down around each mound to seal, making sure there are no air pockets. Cut between the ravioli with a pastry cutter or knife.

Cook the Ravioli
Bring a large pot of salted water to a boil. Carefully add the ravioli and cook for about 4-5 minutes or until they float to the surface. Remove with a slotted spoon and drain.

Serve
Serve the ravioli warm with your favorite sauce or simply with olive oil and grated cheese on top.
