Ravioli Preparation and Cooking

    Prepare the Filling

    In a skillet, cook the Italian sausage over medium heat until browned. Drain excess fat and let it cool. In a bowl, mix the cooked sausage with mascarpone cheese, salt, and black pepper.

    Make the Dough

    In a large bowl, combine flour and a pinch of salt. Make a well in the center and crack in the eggs. Add olive oil. Mix until a dough forms and knead for about 10 minutes until smooth. Wrap in plastic and let it rest for 30 minutes.

    Roll Out the Dough

    Divide the dough into four pieces. Roll each piece out thinly using a pasta machine or rolling pin until about 1-2 mm thick.

    Form the Ravioli

    Place small spoonfuls of the sausage mixture on one sheet of pasta, leaving enough space in between. Moisten the edges with water, then place another sheet of pasta on top. Press down to seal and cut into squares or circles.

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Cook the ravioli for 3-4 minutes or until they float to the surface. Remove with a slotted spoon.

    Prepare the Sauce

    In a saucepan, heat the tomato sauce over medium heat. Stir in the Italian butter until melted and season with salt and pepper.

    Serve

    Plate the cooked ravioli and ladle the warm tomato sauce over them. Garnish with fresh basil leaves and serve immediately.
