Chicken Marinade
Method
Preparation and Cooking
- 1
Marinate the Chicken
In a large bowl, combine yogurt, olive oil, minced garlic, ground cumin, ground coriander, paprika, turmeric, cinnamon, salt, black pepper, and lemon juice. Mix well to create a marinade.
- 2
Add Chicken
Add the chicken thighs to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or overnight for more flavor.
- 3
Grill the Chicken
Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade and discard the marinade. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and juices run clear.
- 4
Prepare Rice and Salad
While the chicken is grilling, cook rice according to package instructions. For the salad, chop your choice of vegetables (like lettuce, tomatoes, cucumbers, and bell peppers), and toss with olive oil, lemon juice, salt, and pepper.
- 5
Serve
Once the chicken is cooked, let it rest for a few minutes before slicing. Serve the sliced chicken over a bed of rice with the salad on the side.
