Prepare the Chicken
Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and black pepper.

Coat the Chicken
Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of bread crumbs and grated Romano cheese. Dredge each chicken breast in flour, dip it in the egg, and coat it with the bread crumb mixture.

Fry the Chicken
In a large skillet, heat the olive oil over medium heat. Add the breaded chicken breasts and fry until golden brown on both sides, about 4-5 minutes per side.

Bake the Chicken
Transfer the fried chicken breasts to a baking dish. Spoon tomato basil sauce over each piece and top with mozzarella cheese. Bake in the preheated oven for about 15 minutes, or until the cheese is melted and bubbly.

Slice the crusty baguettes in half and place a piece of the chicken on each. Add more tomato basil sauce if desired, then close the sandwich and serve warm.
