Method

Fried Mahi

    Prepare the Breading

    In a mixing bowl, combine flour, cornstarch, salt, black pepper, and garlic powder.

    Prepare the Eggs

    In a separate bowl, beat the eggs.

    Coat the Fish

    Dip each Mahi Mahi fillet first into the flour mixture, then into the beaten eggs, and finally back into the flour mixture to coat.

    Heat Oil

    In a large skillet, heat vegetable oil over medium-high heat.

    Fry the Fish

    Once the oil is hot, carefully add the coated Mahi fillets and fry for about 4-5 minutes on each side or until golden brown and cooked through.

    Drain the Fish

    Remove the fried Mahi from the skillet and place on a paper towel to drain excess oil.

Red Cabbage Slaw

    Mix the Slaw

    In a large bowl, combine the sliced red cabbage, shredded carrot, and chopped cilantro.

    Prepare the Dressing

    In a small bowl, whisk together lime juice, olive oil, salt, and black pepper.

    Dress the Slaw

    Pour the dressing over the cabbage mixture and toss to combine.

Pickled Red Onion & Jalapeño

    Make the Pickling Liquid

    In a medium saucepan, combine white vinegar, sugar, and salt. Heat until sugar and salt dissolve.

    Pickle the Vegetables

    Place the sliced red onion and jalapeño in a clean jar and pour the pickling liquid over them. Let it sit for at least 30 minutes.

Avocado Crema

    Blend the Crema

    In a food processor, combine ripe avocados, sour cream, lime juice, and salt.

    Adjust Seasoning

    Blend until smooth and creamy, then taste and adjust seasoning as needed.

Taco Assembly

    Warm the Tortillas

    Warm the corn tortillas in a dry skillet over medium heat until pliable.

    Assemble the Tacos

    Spread a layer of black beans on each tortilla, followed by a piece of fried Mahi Mahi.

    Top with red cabbage slaw, pickled red onion and jalapeño, fresh mint, orange segments, and a drizzle of avocado crema.

    Finish with Queso Fresco

    Sprinkle with crumbled queso fresco before serving.
