Charred Citrus Chicken

Marinate the Chicken
In a large bowl, combine the orange juice, lime juice, minced garlic, cumin, salt, black pepper, and olive oil. Add the chicken thighs and toss to coat. Cover and let marinate in the refrigerator for at least 30 minutes.

Grill the Chicken
Preheat a grill or grill pan over medium-high heat. Remove chicken from marinade and discard the marinade. Grill the chicken for about 6-7 minutes on each side until cooked through and slightly charred. Remove from grill and let rest for a few minutes before slicing.
Salsa Cacahuate

Prepare the Salsa
In a bowl, mix together the peanut butter, lime juice, chopped cilantro, minced jalapeño, and salt. Gradually add water until reaching your desired consistency. Stir well to combine.
Red & Green Salsa

Make the Salsa
In a bowl, combine the diced tomatoes, green bell pepper, red onion, chopped cilantro, lime juice, and salt. Mix well and let sit for at least 10 minutes for flavors to meld.
