Achiote Marinated Shrimp

    Prepare the Marinade

    In a bowl, mix together the achiote paste, lime juice, minced garlic, olive oil, salt, and black pepper until well combined.

    Marinate the Shrimp

    Add the shrimp to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes, allowing the flavors to infuse.

    Cook the Shrimp

    Heat a skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side or until they are opaque and cooked through. Remove from heat.

Assemble the Tacos

    Warm the Tortillas

    In another skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

    Fill the Tacos

    Place a generous amount of black beans on each tortilla. Top with the cooked shrimp, pickled red onion, and toasted pepitas.

    Fold the tortillas in half and serve the tacos warm.

Prepare the Peanut Butter & Jelly Roll-Up

    Spread Ingredients

    Lay out the flour tortillas on a clean surface. Spread 2 tablespoons of peanut butter on each tortilla, followed by 2 tablespoons of jelly.

    Roll the tortillas tightly, starting from one end to the other, creating a roll-up.

    Slice and Serve

    Slice the roll-ups into bite-sized pieces and serve alongside the tacos.
