Prepare the Sushi Rice

Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions. Once done, let it sit for 10 minutes.

Season the Rice

In a small saucepan, heat rice vinegar, sugar, and salt over low heat until dissolved. Stir the mixture into the cooked rice gently, using a wooden spatula to avoid smashing the grains.

Assemble the Roll

On a bamboo sushi mat, place a sheet of soy paper shiny side down. Wet your hands to prevent sticking and spread a thin layer of sushi rice over the paper, leaving about an inch at the top.

Add Fillings

In the center of the rice, layer the diced tuna, diced salmon, and sliced avocado. Drizzle with soy sauce and a little spicy mayo.

Roll the Sushi

Using the bamboo mat, carefully roll the soy paper away from you, pressing gently but firmly to create a tight roll. Once rolled, use a sharp knife to slice the roll into 6-8 pieces.

Serve

Arrange the sushi pieces on a plate and serve with additional soy sauce and spicy mayo on the side.
