Prepare the Chicken
Rub the chicken breasts with Cajun seasoning, salt, and black pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat and cook the chicken for 6-7 minutes on each side, or until cooked through and blackened. Remove from the skillet and let rest before slicing.
Cook the Fettuccine
In a large pot of salted boiling water, cook the fresh fettuccine according to package instructions until al dente. Drain and set aside.
Sauté the Vegetables
In the same skillet used for the chicken, add the remaining tablespoon of olive oil and sauté the sliced mushrooms and chopped scallions over medium heat until softened, about 4-5 minutes.
Make the Alfredo Sauce
Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and the sauce is creamy. Season with additional Cajun seasoning, salt, and black pepper to taste.
Combine and Serve
Add the cooked fettuccine to the sauce and toss to coat. Top with sliced blackened chicken and serve immediately.
