Ravioli Dough

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center, crack the eggs into the well, and mix the ingredients until they form a dough. Knead the dough on a floured surface for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for at least 30 minutes.

    Prepare the Filling

    Finely chop the scallions and mix them with the ricotta cheese, salt, and black pepper in a bowl. Set aside.

Mint and Garlic Yogurt Sauce

    Make the Yogurt Sauce

    In a small bowl, mix the Greek yogurt with chopped fresh mint leaves, minced garlic, lemon juice, and salt. Stir until well combined and refrigerate until ready to serve.

Spiced Ground Beef Sauce

    Cook the Beef Sauce

    In a skillet, heat a drizzle of oil over medium heat. Add chopped onion and minced garlic, sauté until soft. Add ground beef and cook until browned. Stir in ground cumin, ground coriander, paprika, salt, and black pepper. Cook for an additional 5 minutes until the spices are fragrant.

    Fill and Shape Ravioli

    Roll out the dough on a floured surface into thin sheets. Cut into squares (about 3 inches). Place a small spoonful of filling in the center of each square. Moisten the edges with water, fold over to form a triangle, and press the edges to seal. Repeat until all dough and filling are used.

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Carefully add the ravioli and cook for about 4-5 minutes or until they float to the surface. Remove with a slotted spoon and drain.

Serve

    On a large serving platter, arrange the cooked ravioli. Top with spiced ground beef sauce and drizzle with mint and garlic yogurt sauce. Serve with naan on the side.
