Method

Marinate the Shrimp

  1. 1

    Prepare the Marinade

In a bowl, combine the plain yogurt, tandoori masala spice mix, lemon juice, minced garlic, minced ginger, and salt. Mix well.

  2. 2

    Marinate the Shrimp

Add the shrimp to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes.

Prepare the Grilled Vegetables

  1. 3

    Preheat the Grill

Preheat your grill or grill pan over medium-high heat.

  2. 4

    Season the Vegetables

In a bowl, toss the halved tomatoes and sliced onion with olive oil, salt, and black pepper until evenly coated.

  3. 5

    Grill the Vegetables

Place the seasoned tomatoes and onions on the grill. Grill for about 5-7 minutes, turning occasionally, until they are tender and have grill marks. Remove and set aside.

Grill the Shrimp

  1. 6

    Grill the Shrimp

On the same grill or grill pan, cook the marinated shrimp for about 2-3 minutes per side, or until they are opaque and cooked through. Remove from heat.

Assemble the Salad

  1. 7

    Combine Ingredients

In a large salad bowl, add the mixed greens, sliced cucumber, and sliced avocado. Toss gently.

  2. 8

    Top the Salad

Add the grilled shrimp and grilled vegetables on top of the salad. Garnish with chopped cilantro.

  3. 9

    Serve

Serve the salad with lime wedges on the side for an extra burst of flavor.
