Tandoori Chicken Tikka

    Prepare Marinade

    In a large bowl, combine yogurt, tandoori spice mix, lemon juice, minced garlic, minced ginger, and salt. Mix well.

    Marinate Chicken

    Add the bone-in dark meat chicken to the marinade, ensuring it is well coated. Cover and refrigerate for at least 2 hours, preferably overnight.

    Cook Chicken

    Preheat the grill or oven to medium-high heat. Brush the grill or baking tray with vegetable oil. Remove the chicken from the marinade and place it on the grill or tray. Cook for 25-30 minutes, turning occasionally until the chicken is cooked through and has a nice char.

Cilantro Yogurt Sauce

    Mix Sauce Ingredients

    In a small bowl, combine plain yogurt, chopped cilantro, lemon juice, minced garlic, and salt. Mix until well combined and set aside.

Tandoori Naan

    Prepare Dough

    In a small bowl, dissolve the sugar and yeast in warm water. Let it sit for 5-10 minutes until frothy. In a large bowl, combine all-purpose flour and salt. Add the yeast mixture, yogurt, and vegetable oil. Mix until a dough forms.

    Knead Dough

    Knead the dough on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let rise for about 1 hour until doubled in size.

    Cook Naan

    Preheat a skillet or tandoor over medium heat. Divide the dough into equal portions and roll out each into a flat round. Cook each naan for 1-2 minutes on each side until puffed and golden.

Rice

    Rinse the basmati rice under cold water until the water runs clear to remove excess starch.

    In a medium saucepan, combine rinsed rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and cook for about 15 minutes until the water is absorbed and rice is tender.

Side Salad

    In a large bowl, combine diced cucumber, diced tomato, thinly sliced red onion, and chopped lettuce. Drizzle with olive oil and lemon juice, then sprinkle with salt. Toss gently to combine.
