For the Potato Curry

    Prepare the Ingredients

    Peel and dice the potatoes into bite-sized cubes. Finely chop the onion, garlic, and ginger. Chop the tomato and slit the green chili.

    Cook the Onions

    In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until they turn translucent and slightly golden, about 5-7 minutes.

    Add Garlic and Ginger

    Stir in the minced garlic and ginger, cooking for an additional 2 minutes until fragrant.

    Mix in Spices

    Add the curry powder, turmeric powder, and salt. Stir well to coat the onion mixture with the spices.

    Add Potatoes and Tomato

    Add the diced potatoes and chopped tomato to the pot. Stir well to combine all the ingredients.

    Add Coconut Milk

    Pour in the coconut milk and add the green chili. Mix everything together, ensuring the potatoes are covered in the sauce.

    Simmer the Curry

    Cover the pot and let the curry simmer for 20-25 minutes until the potatoes are tender, stirring occasionally.

    Finish with Cilantro

    Once the potatoes are cooked, stir in the chopped cilantro and adjust the seasoning if necessary. Remove from heat.

For the Basmati Rice

    Rinse the Rice

    In a bowl, rinse the basmati rice under cold water until the water runs clear. This removes excess starch and prevents stickiness.

    In a medium saucepan, combine the rinsed rice, water, and salt. Bring to a boil over high heat.

    Simmer the Rice

    Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15-20 minutes until all the water is absorbed.

    Fluff the Rice

    Remove the saucepan from heat and let it sit, covered, for 5 minutes. Then, fluff the rice with a fork and stir in the ghee or butter.
