Add Aromatics
Stir in the minced garlic and ginger, cooking for another 2 minutes until fragrant.

Spice it Up
Add the curry powder, turmeric powder, and salt. Stir well to coat the onions and cook for 1 minute.

Cook the Potatoes
Add the diced potatoes to the pan, stirring to combine. Pour in the coconut milk and enough water to just cover the potatoes. Bring to a boil, then reduce heat to low. Cover and simmer for 15 minutes.

Add Green Peas
After 15 minutes, add the green peas and cook for an additional 5 minutes until the potatoes are tender and the peas are heated through.

Finish with Coriander
Stir in the chopped fresh coriander just before serving.

Rinse the Rice
Rinse the basmati rice under cold water until the water runs clear to remove excess starch.

Cook the Rice
In a separate pot, combine the rinsed rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is tender and water is absorbed.

Fluff the Rice
Turn off the heat and let the rice sit covered for 5 minutes. Then fluff with a fork before serving.
