Lamb Tikka Marinade

Chicken Tikka Marinade

Method

Marinade Preparation

  1. 1

    Prepare Lamb Marinade

In a large bowl, combine Greek yogurt, ginger paste, garlic paste, garam masala, cumin powder, coriander powder, turmeric powder, red chili powder, salt, lemon juice, and oil. Mix until well blended. Add cubed lamb and coat thoroughly. Cover and refrigerate for at least 2 hours, or preferably overnight.

  2. 2

    Prepare Chicken Marinade

In another bowl, combine Greek yogurt, ginger paste, garlic paste, garam masala, cumin powder, coriander powder, turmeric powder, red chili powder, salt, lemon juice, and oil. Mix until smooth. Add cubed chicken and coat evenly. Cover and refrigerate for at least 2 hours, or preferably overnight.

Cooking

  1. 3

    Soak Skewers (if wooden)

If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning.

  2. 4

    Skewer the Meat

Once marinated, thread the lamb and chicken pieces onto separate skewers, alternating pieces for an appealing presentation.

  3. 5

    Preheat Grill

Preheat your grill or barbecue to medium-high heat.

  4. 6

    Grill the Skewers

Place skewers on the grill and cook for 10-15 minutes, turning occasionally until the meat is cooked through and has a nice char. The internal temperature should reach 75°C (165°F) for chicken and 70°C (160°F) for lamb.

  5. 7

    Garnish and Serve

Remove skewers from the grill, sprinkle with fresh cilantro, and serve with lemon wedges on the side.
