Method

Preparation

  1. 1

    Prepare the Marinade

In a bowl, mix together the olive oil, minced garlic, lemon juice, ground cumin, paprika, ground black pepper, and salt until well combined.

  2. 2

    Marinate the Meats

Cut the lamb shoulder into 1-inch cubes and add to the marinade. Mix well to ensure all pieces are coated. In a separate bowl, combine the ground beef with half of the remaining marinade. Mix until the beef is well seasoned. Cover both bowls and refrigerate for at least 1 hour, or overnight for more flavor.

Vegetable Preparation

  1. 3

    Chop Vegetables

While the meat is marinating, chop the bell peppers, onion, and zucchini into 1-inch pieces. Set aside.

Assembling the Kabobs

  1. 4

    Soak Skewers (if Wooden)

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling.

  2. 5

    Assemble Kabobs

On each skewer, alternate pieces of marinated lamb, ground beef shaped into meatballs, and chopped vegetables. Ensure to leave some space between each item for even cooking.

Grilling

  1. 6

    Preheat the Grill

Preheat your grill to medium-high heat. If using a charcoal grill, allow the coals to burn down to a consistent heat.

  2. 7

    Grill the Kabobs

Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the meat is cooked through and has nice grill marks, and the vegetables are tender.

Serving

  1. 8

    Serve the Kabobs

Remove the kabobs from the grill and let them rest for a few minutes. Serve with your choice of sides, such as rice, pita bread, or a fresh salad.
