Kofta Preparation

Mix the Kofta Ingredients
In a large bowl, combine the ground lamb, grated onion, minced garlic, chopped parsley, cumin powder, paprika, salt, black pepper, cinnamon, and olive oil. Mix thoroughly until all ingredients are well incorporated.

Shape the Kofta
Wet your hands with water to prevent sticking. Take a portion of the mixture and shape it into elongated patties or cylinders, about 4 inches long. Place them on a plate and set aside.

Marinate the Chicken
In a separate bowl, combine chicken cubes, yogurt, lemon juice, minced garlic, cumin powder, salt, black pepper, and olive oil. Mix until the chicken is evenly coated. Cover and let marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

Skewer the Chicken and Vegetables
Thread the marinated chicken cubes, bell pepper squares, and onion squares onto skewers, alternating between the chicken and vegetables.
