Kabob Preparation

    Marinate the Chicken

    In a bowl, combine chicken cubes, olive oil, garlic powder, paprika, salt, and black pepper. Mix well to coat the chicken. Let it marinate for at least 30 minutes.

    Prepare the Skewers

    If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Thread the marinated chicken, bell peppers, and red onion onto the skewers, alternating between chicken and vegetables.

Potato Curry Preparation

    Cook the Base

    In a pot, heat a little oil over medium heat. Add chopped onions, minced garlic, and ginger. Sauté until the onions are translucent.

    Add Potatoes and Spices

    Stir in the diced potatoes and curry powder. Cook for another 2 minutes, stirring constantly.

    Simmer the Curry

    Pour in the coconut milk and vegetable broth. Bring to a boil, then reduce heat and let it simmer for 20 minutes or until potatoes are tender. Season with salt and black pepper to taste.

Rice Preparation

    Cook the Rice

    In a medium saucepan, combine basmati rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until rice is cooked and water is absorbed. Fluff with a fork before serving.

Final Assembly

    Grill the Kabobs

    Preheat the grill or grill pan over medium-high heat. Grill the skewers for about 10-12 minutes, turning occasionally until the chicken is cooked through and has nice grill marks.

    Serve the grilled chicken kabobs over a bed of basmati rice with potato curry on the side. Include a can of soda for a refreshing beverage.
