Prepare the Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Thread the marinated chicken, bell peppers, and red onion onto the skewers, alternating between chicken and vegetables.

Stir in the diced potatoes and curry powder. Cook for another 2 minutes, stirring constantly.

Pour in the coconut milk and vegetable broth. Bring to a boil, then reduce heat and let it simmer for 20 minutes or until potatoes are tender. Season with salt and black pepper to taste.

Grill the Kabobs
