Method
Chicken Kabob Skewers
Prepare the Chicken
Cut the chicken breast into 1-inch cubes. In a bowl, mix olive oil, garlic powder, ground cumin, salt, and black pepper. Add the chicken and coat well. Marinate for at least 30 minutes.
Prepare the Vegetables
Cut the bell peppers and red onion into 1-inch pieces.
Assemble the Skewers
Thread the marinated chicken, bell peppers, and red onion onto the skewers alternately.
Beef Kabob Skewers
Hummus
Prepare the Ingredients
Rinse and drain the canned chickpeas. Peel the garlic clove.
Serve
Transfer the hummus to a serving bowl and drizzle with olive oil.
Pumpkin Kadu
Cook the Mixture
In a pot, heat olive oil over medium heat. Add onion and garlic, and sauté until softened. Add pumpkin, ground coriander, ground cumin, salt, and water. Stir well.
Simmer
Cover and simmer for about 20-25 minutes, or until the pumpkin is tender.
Serve
Serve the pumpkin kadu warm.
Salad
Prepare the Vegetables
Wash and chop the mixed greens, cherry tomatoes, and cucumber.
Make the Dressing
In a small bowl, whisk together olive oil, balsamic vinegar, salt, and black pepper.
Assemble the Salad
In a large bowl, combine the mixed greens, cherry tomatoes, and cucumber. Drizzle with dressing and toss to combine.
Rice
Rinse the Rice
Rinse the long-grain rice under cold water until the water runs clear.
Cook the Rice
In a saucepan, combine rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and water is absorbed.
Tandoori Naan
Prepare the Dough
In a bowl, combine warm water, sugar, and yeast. Let it sit for 10 minutes until frothy. In a large bowl, combine flour and salt. Add the yeast mixture and yogurt. Knead until smooth.
Let it Rise
Cover the dough and let it rise in a warm place for about 1 hour, or until doubled in size.
Shape the Naan
Divide the dough into small balls. Roll out each ball into an oval shape.
Cook the Naan
Preheat a non-stick pan over medium-high heat. Cook each naan for about 2-3 minutes on each side, until golden brown.
