Method

Preparing the Cauliflower

    Cut the Cauliflower

    Remove the leaves and stem from the cauliflower head. Cut the cauliflower into bite-sized florets and set aside.

    Make the Batter

    In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and water. Whisk until smooth and well combined.

Frying the Cauliflower

    Heat the Oil

    In a deep saucepan or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Coat the Cauliflower

    Dip each cauliflower floret into the batter, ensuring they are well-coated. Allow excess batter to drip off.

    Fry the Cauliflower

    Carefully place the battered florets into the hot oil, frying in batches to avoid overcrowding. Fry for about 5-7 minutes or until golden brown and crispy.

    Drain

    Using a slotted spoon, remove the fried cauliflower from the oil and place them on a paper towel-lined plate to drain excess oil.

Making the Chipotle Sauce

    Mix the Sauce Ingredients

    In a small bowl, combine mayonnaise, chipotle peppers in adobo sauce, lime juice, garlic powder, and salt. Mix well until smooth and creamy.

Serving

    Plate and Serve

    Transfer the fried cauliflower to a serving platter and drizzle the chipotle sauce generously over the top. Serve immediately while hot.
