Falafel Preparation

    Soak and Blend Ingredients

    In a bowl, soak the canned chickpeas in water for about 1-2 hours. Drain and rinse. In a food processor, combine the chickpeas, parsley, cilantro, garlic, cumin, coriander, baking powder, salt, black pepper, and flour. Pulse until a coarse mixture forms, scraping down the sides as needed.

    Form the Falafel Balls

    Once the mixture is well combined, use your hands to form small balls or patties, about 1.5 inches in diameter. Place them on a tray lined with parchment paper.

    Fry the Falafel

    In a large skillet or deep fryer, heat the vegetable oil over medium-high heat. Once hot, carefully add falafel balls in batches, frying until golden brown and crispy, about 3-4 minutes on each side. Remove and drain on paper towels.

Wrap Assembly

    Prepare the Wrap

    Warm the pita bread or flatbreads in a dry skillet or microwave. Lay each piece flat and place a generous portion of shredded lettuce, diced tomatoes, and cucumbers in the center.

    Add the Falafel

    Place 2-3 falafel balls on top of the vegetables in each wrap.

    Drizzle with Tahini Sauce

    Drizzle tahini sauce generously over the falafel and veggies.

    Wrap it Up

    Fold the sides of the pita or flatbread over the filling and roll it tightly from the bottom to the top. Secure with a toothpick if necessary.

French Fries Preparation

    Prepare the Potatoes

    Rinse the cut potatoes in cold water to remove excess starch. Pat dry with a towel.

    Fry the Potatoes

    In a separate pot or deep fryer, heat the vegetable oil over medium-high heat. Once hot, carefully add the potato fries in batches. Fry until golden and crispy, about 5-7 minutes, then remove and drain on paper towels. Sprinkle with salt immediately.

Serve with Soda

    Prepare the Fountain Soda

    Fill 4 cups with your choice of soda, ensuring they’re chilled and ready to serve alongside the falafel wraps and fries.
