Method

Falafel

    Soak Chickpeas

    In a large bowl, cover dried chickpeas with water and let soak overnight. Drain and rinse before using.

    Prepare Falafel Mixture

    In a food processor, combine soaked chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, baking soda, salt, and pepper. Blend until a coarse mixture forms.

    Form Falafel Balls

    Form the mixture into small balls or patties using your hands.

    Fry Falafel

    In a deep skillet, heat oil over medium heat. Fry falafel balls in batches until golden brown, about 3-4 minutes. Drain on paper towels.

Hummus

    Blend Ingredients

    In a food processor, combine cooked chickpeas, tahini, garlic, lemon juice, olive oil, salt, and water. Blend until smooth and creamy.

    Adjust Consistency

    If the hummus is too thick, add more water, one tablespoon at a time, until desired consistency is reached.

Afghan Salad

    Mix Salad Ingredients

    In a bowl, combine diced tomatoes, cucumber, red onion, lemon juice, olive oil, salt, and pepper. Toss gently to combine.

Kabuli Rice

    Rinse Rice

    Rinse the basmati rice under cold water until the water runs clear. Drain.

    Cook Rice

    In a pot, combine rinsed rice, water, salt, and cinnamon. Bring to a boil, then reduce heat to low and cover. Cook for 15-20 minutes, until rice is tender and water is absorbed.

    Add Vegetables

    In a small pan, sauté julienned carrot and raisins in a little oil until tender. Stir into cooked rice along with slivered almonds.

Tandoori Naan

    Prepare Dough

    In a bowl, dissolve yeast and sugar in warm water. Let sit for 5 minutes until frothy. In a large mixing bowl, combine flour and salt. Add yogurt, oil, and yeast mixture. Knead until smooth.

    Cover the dough with a damp cloth and let it rise in a warm place for about 1 hour, or until doubled in size.

    Shape Naan

    Divide the risen dough into equal portions. Roll each portion into an oval shape.

    Heat a skillet or tandoor over high heat. Cook each naan for 1-2 minutes on each side until puffed and golden.

Tahini Sauce

    In a small bowl, combine tahini, lemon juice, water, and salt. Whisk until smooth. Adjust water to reach desired consistency.
