Chicken Tikka Preparation

    Marinate the Chicken

    In a large bowl, combine Greek yogurt, lemon juice, minced garlic, minced ginger, garam masala, cumin powder, paprika, salt, and black pepper. Mix well to create a marinade.

    Add Chicken

    Cut the boneless chicken thighs into bite-sized pieces and add them to the marinade. Ensure all pieces are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.

Kofta Kabob Preparation

    Combine Ingredients

    In a mixing bowl, combine ground beef or lamb, finely chopped onion, minced garlic, chopped parsley, chopped cilantro, cumin powder, coriander powder, salt, and black pepper. Mix thoroughly with your hands until fully combined.

    Shape the Kofta

    Divide the mixture into equal portions and shape each portion around a skewer, forming long cylindrical shapes.

Cooking

    Prepare Skewers

    If using wooden skewers, soak them in water for about 30 minutes to prevent burning during cooking.

    Cook Chicken Tikka

    Preheat a grill or oven to medium-high heat. Thread the marinated chicken onto skewers and brush with vegetable oil. Grill for about 10-12 minutes, turning occasionally, until cooked through.

    Cook Kofta Kabob

    On the same grill, place the kofta skewers. Grill for about 8-10 minutes, turning occasionally, until browned and cooked through.
