Chicken Tikka

    Marinate the Chicken

    In a large bowl, combine the yogurt, lemon juice, minced garlic, grated ginger, cumin powder, coriander powder, garam masala, turmeric powder, red chili powder, salt, and vegetable oil. Mix well to create a marinade. Add the boneless chicken thighs and coat them thoroughly in the marinade. Cover the bowl and refrigerate for at least 1 hour, preferably overnight.

    Prepare for Grilling

    Preheat the grill or oven to high heat. If using skewers, ensure they are soaked in water for at least 30 minutes to prevent burning.

    Cook the Chicken Tikka

    Thread the marinated chicken thighs onto skewers, leaving space between pieces for even cooking. Grill the skewers for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has a nice char.

Tikka Kabobs

    Prepare the Kabob Marinade

    In a bowl, mix some of the leftover marinade from the Chicken Tikka (if available) or create a new marinade with yogurt, lemon juice, and spices. Add the cubed chicken breast, bell peppers, and onion. Toss well to ensure everything is coated. Let it marinate for at least 30 minutes.

    Assemble the Kabobs

    On soaked wooden skewers, alternate threading the marinated chicken, bell peppers, and onion pieces. Season with salt and pepper to taste.

    Cook the Tikka Kabobs

    Grill the skewers for 10-12 minutes, turning occasionally until the chicken is cooked through and the vegetables are slightly charred.

    Cook the Rice

    In a pot, bring 2 cups of water to a boil. Add 1 cup of basmati rice and a pinch of salt. Reduce heat to low, cover, and simmer for about 15 minutes until rice is tender and water is absorbed. Fluff with a fork before serving.

    Prepare the Naan

    Warm the naan bread on the grill or in an oven for a few minutes until heated through.

    In a bowl, combine mixed salad greens and serve with lemon wedges on the side.
