Chicken Tenders

Prepare the Chicken
Cut the chicken breast into strips, about 1 inch wide.

Set Up Breading Stations
In one bowl, combine flour, cornstarch, salt, pepper, garlic powder, and paprika. In another bowl, whisk together buttermilk and eggs.

Bread the Chicken
Dip each chicken strip first into the buttermilk mixture, then dredge in the flour mixture, coating well. Set aside.

Heat the Oil
In a large skillet, heat vegetable oil over medium-high heat until hot.

Fry the Chicken
Carefully add breaded chicken strips to the hot oil. Fry for 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Potatoes
Peel and cut the potatoes into thin strips, about 1/4 inch thick.

Soak the Potatoes
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

Heat the Oil
In a large pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes
Drain and pat the potatoes dry. Carefully add them to the hot oil in batches. Fry for about 3-4 minutes or until golden brown. Remove and drain on paper towels, then sprinkle with salt.
