Prepare the Marinade
In a large bowl, combine minced garlic, ground cumin, ground coriander, paprika, turmeric, cayenne pepper, olive oil, lemon juice, salt, and black pepper. Mix well to create a marinade.

Marinate the Chicken
Add the boneless chicken thighs to the marinade, ensuring they are fully coated. Cover the bowl and refrigerate for at least 1 hour, preferably overnight for best flavor.
Cooking the Chicken

Cook the Chicken
Preheat your grill or vertical spit. Remove the marinated chicken from the refrigerator and skewer onto the spit. Cook for about 20-25 minutes, turning occasionally, until the chicken is cooked through and has a nice char.

Once cooked, remove the chicken from the spit and let it rest for about 5 minutes before slicing thinly.

Warm the pita bread slightly on the grill or in a pan.
