Method

Marinating the Chicken

    Prepare the Marinade

    In a bowl, combine olive oil, lemon juice, minced garlic, paprika, cumin, salt, and black pepper. Mix well to create a marinade.

    Marinate the Chicken

    Cut the chicken breast into cubes and add them to the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Grilling the Vegetables

    Prepare the Vegetables

    Slice the tomatoes and onion into thick wedges.

    Season the Vegetables

    In a bowl, toss the sliced tomatoes and onion with olive oil, salt, and black pepper.

    Grill the Vegetables

    Preheat a grill or grill pan over medium heat. Grill the vegetables for about 5-7 minutes, turning occasionally until they are charred and tender. Remove from heat.

Grilling the Chicken

    Grill the Chicken

    Using the same grill, cook the marinated chicken cubes for about 8-10 minutes, turning occasionally until they are cooked through and have nice grill marks. Make sure the internal temperature reaches 165°F (75°C).

Assembling the Salad

    Prepare the Salad Base

    In a large bowl, place the mixed greens as the base.

    Add Vegetables and Chicken

    Top the mixed greens with the grilled vegetables, grilled chicken, sliced cucumber, cherry tomatoes, and crumbled feta cheese.

    Dress the Salad

    Drizzle the balsamic vinaigrette over the salad and toss gently to combine all the ingredients.
