Method

Preparation

  1. 1

    Prepare the Marinade

In a bowl, whisk together the olive oil, lemon juice, minced garlic, paprika, cumin, salt, black pepper, and oregano until well combined.

  2. 2

    Marinate the Proteins

Cut the chicken breast into 1-inch cubes and place them into a large zip-top bag or bowl. Add half of the marinade to the chicken, seal the bag or cover the bowl, and refrigerate for at least 30 minutes. In another bowl, combine the shrimp and the remaining marinade, cover, and refrigerate for 15 minutes.

Assembly

  1. 3

    Prepare the Vegetables

Chop the bell peppers into 1-inch pieces and slice the red onion into thick rounds. Set aside.

  2. 4

    Assemble the Kabobs

Thread the marinated chicken, shrimp, bell peppers, red onion, and cherry tomatoes onto skewers, alternating between each ingredient.

Grilling

  1. 5

    Preheat the Grill

Preheat your grill to medium-high heat (about 400°F).

  2. 6

    Grill the Kabobs

Place the assembled kabobs on the grill and cook for 8-10 minutes, turning occasionally, until the chicken is cooked through (internal temperature of 165°F) and the shrimp are pink and opaque.

Serving

  1. 7

    Serve the Kabobs

Remove the kabobs from the grill and let them rest for a few minutes before serving. Enjoy your Chicken & Shrimp Kabob Combo with your choice of dipping sauce or over a bed of rice.
