Chicken Marinade
Vegetables for Kabobs
Method
Marinating the Chicken
- 1
Prepare the Marinade
In a large mixing bowl, combine olive oil, lemon juice, garlic powder, paprika, cumin, salt, and black pepper. Mix well until fully combined.
- 2
Marinate the Chicken
Cut the chicken breasts into 1.5-inch pieces and add to the marinade. Toss the chicken in the marinade until well coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Preparing the Vegetables
- 3
Chop the Vegetables
While the chicken is marinating, chop the bell peppers, red onion, and zucchini into 1.5-inch pieces. Set aside.
Assembling and Grilling the Kabobs

Prepare Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.
- 5
Assemble the Kabobs
