Method

Kabob Skewers

  1. 1

    Prepare the Meat

Cut the chicken breast and beef sirloin into 1-inch cubes and place them in a bowl.

  2. 2

    Marinate the Meat

In a separate bowl, mix olive oil, minced garlic, cumin powder, paprika, salt, and black pepper. Add the chicken and beef cubes, toss to coat, and let marinate for at least 30 minutes.

  3. 3

    Prepare Vegetables

Chop the red and green bell peppers and red onion into large pieces.

  4. 4

    Assemble Skewers

Thread the marinated meat and chopped vegetables onto skewers, alternating between meat and veggies.

  5. 5

    Grill the Skewers

Preheat the grill over medium-high heat and grill the skewers for about 10-12 minutes, turning occasionally until cooked through.

Hummus

  1. 6

    Blend Ingredients

Combine the drained chickpeas, tahini, minced garlic, lemon juice, olive oil, salt, and water in a food processor.

  2. 7

    Process to Smoothness

Blend until smooth. If the hummus is too thick, add more water, a tablespoon at a time, until desired consistency is reached.

  3. 8

    Serve

Transfer hummus to a bowl, drizzle with olive oil, and serve with the kabob skewers.

Pumpkin Kadu

  1. 9

    Sauté Onion and Garlic

In a large pan, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent.

  2. 10

    Add Pumpkin and Spices

Add cubed pumpkin, cumin powder, turmeric powder, and salt. Stir well to combine.

  3. 11

    Cook the Pumpkin

Pour in water, cover the pan, and simmer for 15-20 minutes until the pumpkin is tender.

  4. 12

    Serve

Once cooked, serve the pumpkin kadu alongside the kabob skewers.

Salad

  1. 13

    Prepare Vegetables

In a bowl, combine diced cucumber, diced tomatoes, and torn lettuce leaves.

  2. 14

    Dress the Salad

Drizzle with olive oil, lemon juice, and sprinkle with salt. Toss gently to combine.

  3. 15

    Serve

Serve the fresh salad as a side with the kabob skewers.

Rice

  1. 16

    Rinse Rice

Rinse the basmati rice under cold water until the water runs clear to remove excess starch.

  2. 17

    Cook Rice

In a pot, combine the rinsed rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is tender and water is absorbed.

  3. 18

    Fluff and Serve

Fluff the rice with a fork and serve as a side with the kabob skewers.

Tandoori Naan

  1. 19

    Prepare the Dough

In a mixing bowl, combine all-purpose flour, yogurt, baking powder, and salt. Gradually add water and knead until a soft dough forms.

  2. 20

    Rest the Dough

Cover the dough with a damp cloth and let it rest for at least 30 minutes.

  3. 21

    Roll and Cook Naan

Divide the dough into small balls. Roll each ball into a flat oval shape. Cook on a hot skillet or tandoor for 2-3 minutes on each side until golden brown.

  4. 22

    Serve

Serve the warm naan alongside the kabob skewers and other accompaniments.
