    Prepare the Cauliflower

    Remove the leaves and stem from the cauliflower and cut it into florets. Rinse under cold water and set aside.

    Chop the Vegetables

    Finely chop the onion, tomatoes, garlic cloves, and ginger.

Cooking

    Sauté the Aromatics

    In a large pot or skillet, heat 2 tablespoons of oil over medium heat. Add cumin seeds and let them sizzle for about 30 seconds until fragrant. Add the chopped onion and sauté until it turns translucent, about 5 minutes.

    Add Garlic and Ginger

    Stir in the minced garlic and ginger and cook for another 2 minutes until fragrant.

    Incorporate Spices

    Add curry powder, turmeric powder, and chili powder to the pot. Stir well to combine and cook for 1-2 minutes to toast the spices.

    Add Tomatoes

    Add the chopped tomatoes and cook for about 5 minutes, stirring occasionally, until they soften and begin to break down.

    Add Cauliflower and Coconut Milk

    Add the cauliflower florets to the pot and pour in the coconut milk. Stir to combine all ingredients.

    Simmer

    Bring the mixture to a gentle boil, then reduce the heat to low and cover. Let it simmer for about 15-20 minutes or until the cauliflower is tender.

    Season and Garnish

    Season with salt and black pepper to taste. Remove from heat and garnish with freshly chopped cilantro before serving.
