Method
Making the Dough
- 1
Prepare the Dough
In a large bowl, combine all-purpose flour and salt. Gradually add water and oil, mixing until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.
Preparing the Filling
- 2
- 3
Mix the Filling
Add minced garlic, chopped cilantro, cumin powder, salt, and black pepper to the mashed potatoes. Mix well until all ingredients are evenly combined.
Preparing the Yogurt Raita
- 4
Make the Raita
In a bowl, mix plain yogurt, grated cucumber, chopped mint leaves, and salt. Stir until well combined. Refrigerate until ready to serve.
Assembling and Cooking Bolani
- 5
Divide the Dough
After the dough has rested, divide it into equal portions (about 10). Roll each portion into a ball.
- 6
Roll out the Dough
On a floured surface, roll out each ball into a thin circle (about 6-8 inches in diameter).
- 7
Stuff the Flatbread
Place 2-3 tablespoons of the potato filling in the center of each circle. Fold the edges over the filling and pinch to seal.
- 8
Fry the Bolani
In a deep frying pan, heat oil over medium heat. Carefully place the stuffed flatbreads into the hot oil, frying until golden brown and crispy on both sides (about 3-4 minutes per side). Remove and drain on paper towels.
