Marinate the Beef
In a bowl, combine ground cumin, ground coriander, paprika, ground cinnamon, black pepper, salt, olive oil, minced garlic, and lemon juice. Mix well.

Slice the beef into thin strips and add it to the marinade. Ensure all pieces are coated evenly. Cover and refrigerate for at least 1 hour, preferably overnight.

In a large bowl, combine all-purpose flour, baking powder, and salt. Slowly add water and olive oil. Mix until a dough forms.

Knead the dough on a floured surface for about 5 minutes until smooth. Divide into 6-8 equal portions and roll each into a ball.

Roll out each dough ball into a thin circle. Heat a skillet over medium heat and cook each flatbread for about 2-3 minutes on each side until lightly browned. Keep warm.

Spread the potatoes on a baking sheet in a single layer. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.

Assemble the Shawarma
On a warm flatbread, layer the cooked beef, shredded lettuce, diced tomatoes, and sliced onion. Drizzle with garlic yogurt sauce, chipotle sauce, and hot sauce to taste. Roll up the flatbread to enclose the filling.
