Beef Kabobs Preparation

    Mix Ingredients

    In a large bowl, combine ground beef, chopped onion, minced garlic, ground cumin, ground coriander, paprika, salt, black pepper, and olive oil. Mix until well combined.

    Shape Kabobs

    Divide the mixture into 5 equal portions and shape each portion around a skewer, pressing firmly to hold the meat in place.

    Marinate

    Let the skewers marinate at room temperature for 30 minutes to allow the flavors to meld.

Kofta Kabobs Preparation

    In a separate bowl, combine the ground lamb or beef, grated onion, minced garlic, ground cumin, ground coriander, cinnamon, salt, black pepper, and chopped parsley. Mix until well combined.

    Divide the mixture into 5 equal portions and shape each portion around a skewer, pressing firmly to hold the meat in place.

    Let the skewers marinate at room temperature for 30 minutes.

Salad Preparation

    Combine Salad Ingredients

    In a bowl, combine diced cucumber, diced tomato, sliced red onion, lemon juice, olive oil, salt, black pepper, and chopped parsley. Toss well to combine.

Rice Preparation

    Cook Rice

    In a saucepan, add basmati rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until rice is tender and water is absorbed.

Cooking Kabobs

    Grill Kabobs

    Preheat a grill or grill pan over medium-high heat. Grill the beef and kofta kabobs for about 10-12 minutes, turning occasionally, until fully cooked and nicely charred.
