Preparation

    Prepare the Marinade

    In a large bowl, combine olive oil, soy sauce, lemon juice, minced garlic, ground cumin, smoked paprika, black pepper, and salt. Whisk together until well blended.

    Marinate the Meat

    Cut the beef sirloin into 1-inch cubes and the chicken thighs into similar-sized pieces. Add both to the marinade, ensuring all the meat is well coated. Cover and refrigerate for at least 1 hour, or up to overnight for more flavor.

    Prep the Vegetables

    While the meat is marinating, chop the bell peppers, red onion, and zucchini into bite-sized pieces.

    Soak the Skewers

    If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.

Grilling

    Assemble the Kabobs

    Once the meat has marinated, remove it from the refrigerator. Thread the beef, chicken, and vegetables onto the skewers, alternating between meat and vegetables. Leave a little space between each piece for even cooking.

    Preheat the Grill

    Preheat your grill to medium-high heat (about 400°F or 200°C).

    Grill the Kabobs

    Place the kabobs on the grill and cook for about 10-15 minutes, turning occasionally, until the meat is fully cooked and has nice grill marks. The chicken should reach an internal temperature of 165°F (75°C) and the beef should reach at least 145°F (63°C) for medium-rare.

    Serve

    Once cooked, remove the kabobs from the grill and let them rest for a few minutes. Serve hot with your choice of sides like rice or a fresh salad.
