Dough Preparation

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the egg and water. Mix until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Prepare the Filling

    Chop the scallions finely and mix them in a bowl with the ricotta cheese, salt, and black pepper until combined.

Spiced Ground Beef Sauce Preparation

    Cook the Beef

    In a skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes. Remove excess fat.

    Add Aromatics

    Add finely chopped onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3-4 minutes.

    Stir in the ground cumin, ground coriander, paprika, salt, and black pepper. Cook for another minute until fragrant.

    Simmer the Sauce

    Add water and bring to a simmer. Cook for about 10 minutes until slightly thickened. Set aside.

Mint and Garlic Yogurt Sauce Preparation

    Make the Yogurt Sauce

    In a bowl, mix the plain yogurt with finely chopped fresh mint leaves, minced garlic, and salt. Stir until well combined and set aside.

Assembly and Cooking

    Roll Out the Dough

    On a floured surface, roll out the dough into thin sheets. Use a round cutter to cut out circles.

    Fill the Ravioli

    Place a small spoonful of filling in the center of each dough circle. Moisten the edges with water and fold over to create a half-moon shape. Press to seal.

    Bring a large pot of salted water to a boil. Cook the ravioli in batches for about 4-5 minutes until they float. Remove with a slotted spoon.

    Plate the cooked ravioli, top with spiced ground beef sauce, and drizzle with mint and garlic yogurt sauce. Serve with naan on the side.
