Dough Preparation

Make the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the egg and water. Mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Prepare the Filling
Chop the scallions finely and mix them in a bowl with the ricotta cheese, salt, and black pepper until combined.

Cook the Beef
In a skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes. Remove excess fat.

Add Spices
Stir in the ground cumin, ground coriander, paprika, salt, and black pepper. Cook for another minute until fragrant.

Simmer the Sauce
Add water and bring to a simmer. Cook for about 10 minutes until slightly thickened. Set aside.

Make the Yogurt Sauce
In a bowl, mix the plain yogurt with finely chopped fresh mint leaves, minced garlic, and salt. Stir until well combined and set aside.

Roll Out the Dough
On a floured surface, roll out the dough into thin sheets. Use a round cutter to cut out circles.

Fill the Ravioli
Place a small spoonful of filling in the center of each dough circle. Moisten the edges with water and fold over to create a half-moon shape. Press to seal.

Cook the Ravioli
Bring a large pot of salted water to a boil. Cook the ravioli in batches for about 4-5 minutes until they float. Remove with a slotted spoon.
