    Step 1: Prepare the Dough

    In a saucepan, combine water, butter, and salt. Bring to a boil over medium heat. Once boiling, add the flour all at once, stirring continuously until the mixture forms a ball and pulls away from the sides of the pan. Remove from heat.

    Step 2: Add the Eggs

    Let the dough cool for a few minutes, then add the eggs one at a time, mixing well after each addition. The dough should be smooth and glossy. Stir in the grated cheese and black pepper.

    Step 3: Pipe the Dough

    Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Transfer the dough to a piping bag fitted with a large round tip. Pipe small mounds (about 1 inch in diameter) onto the prepared baking sheet, spacing them about 2 inches apart.

    Bake in the preheated oven for 20-25 minutes, or until the gougères are puffed and golden brown. Avoid opening the oven door during baking.
