Strawberry Purée

Prepare Strawberries
Rinse the strawberries under cold water. Remove the stems and any bruised spots. Pat dry with a kitchen towel or paper towel. Measure out 2 cups of hulled strawberries.

Cook Down (optional for deeper flavor)
Place the hulled strawberries and 2 tablespoons granulated sugar in a small saucepan over medium-low heat. Stir occasionally and simmer gently for 5–7 minutes until the strawberries soften and release their juices. This step concentrates flavor and dissolves the sugar; skip it if you prefer a fresh raw purée.

Blend
Transfer the warm (or raw) strawberries and any juices into a blender or food processor. Add 1 teaspoon fresh lemon juice. Puree until smooth, about 20–30 seconds. If the purée is too thick, add up to 1 tablespoon water and pulse again to reach desired consistency.

Strain (optional for silky texture)
For a very smooth purée, push the blended mixture through a fine-mesh sieve into a bowl using the back of a spoon. Discard seeds and solids remaining in the sieve.

Adjust Sweetness & Chill
Taste the purée and add up to 1 teaspoon powdered sugar if you want it sweeter, stirring until dissolved. If you used the cooking step, allow purée to cool to room temperature, then refrigerate for at least 15–30 minutes before serving or using.

When ready to serve, spoon the purée into glasses, bowl, or a squeeze bottle. Garnish with mint leaves and a light sprinkle of lemon zest if desired. Use the purée as a sauce for desserts (cheesecake, panna cotta), as a topping for yogurt or pancakes, or as a mixer for beverages.

Storage: Store leftover purée in an airtight container in the refrigerator for up to 3 days, or freeze in portions for up to 2 months.
