Preheat and prepare pans
Preheat the oven to 350°F (175°C). Grease and line an 8- or 9-inch round cake pan (or two 8-inch pans for layers) with parchment paper and lightly flour the sides.

Whisk together dry ingredients: In a medium bowl, sift or whisk the flour, cocoa powder, granulated sugar, baking powder, baking soda, and salt until evenly combined.

Combine wet ingredients: In a separate large bowl, whisk the eggs, milk, vegetable oil and vanilla extract until smooth.

Combine wet and dry: Add the dry ingredients to the wet mixture and stir until mostly combined. Slowly pour in the hot brewed coffee and fold gently until batter is smooth. The batter will be thin—this is normal and encourages a moist cake.

Make the mint filling: In a medium bowl, beat the softened butter with an electric mixer until creamy. Gradually add the powdered sugar and beat on low until combined, then increase speed and add the heavy cream 1 tablespoon at a time until you reach a thick, spreadable consistency.

Flavor and color: Add the peppermint extract, salt, and 2–3 drops of green food coloring (if using). Beat until smooth and evenly colored. Taste and add a few more drops of extract if you want a stronger peppermint note. Adjust texture with a little more cream or powdered sugar if needed so the filling holds shape but spreads easily.

Chill briefly: If the filling seems too soft to pipe or spread neatly, chill it in the refrigerator for 15–20 minutes to firm up.

Prepare ganache: Place the chopped semisweet chocolate in a heatproof bowl. Heat the 3/4 cup heavy cream in a small saucepan over medium heat just until it begins to simmer around the edges (do not boil). Pour the hot cream over the chocolate and let sit 1–2 minutes, then whisk gently from the center outward until glossy and smooth. Stir in the 1 tablespoon butter, if using, until incorporated.

Assemble cake: If you baked two layers, place the first cooled layer on a cake plate. Spread half of the mint filling evenly over the layer. Top with the second layer and spread the remaining filling on top. For a single-layer cake, cut the cake horizontally into two layers with a serrated knife and proceed as above.

Crumb coat (optional): Apply a thin layer of ganache or a thin layer of the mint filling around the sides to lock in crumbs. Chill 10–15 minutes until set.

Finish with ganache: Pour the warm ganache over the top of the cake, letting it drip down the sides. Use an offset spatula to spread it smooth if needed. If the ganache has thickened too much, warm it gently over a double boiler or microwave in 5–10 second bursts and stir until pourable.

Garnish and chill: Garnish the top with fresh mint leaves or additional mint filling piped decoratively. Chill the cake for 20–30 minutes to set the ganache before slicing. Serve at room temperature for best texture.
