    Cook the Lasagna Noodles

    Bring a large pot of salted water to a boil. Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.

    Prepare the Vegetables

    Chop the zucchini, mushrooms, bell pepper, and onion into small pieces. Mince the garlic.

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, cooking until fragrant. Add the zucchini, mushrooms, bell pepper, and spinach. Season with salt and black pepper. Sauté until the vegetables are tender. Remove from heat and let cool slightly.

Cheese Mixture

    Mix the Cheese

    In a bowl, combine ricotta cheese, grated Parmesan cheese, shredded mozzarella cheese, and the egg. Add dried oregano and dried basil. Mix until well combined.

Assembly

    Layer the Lasagna

    Preheat your oven to 180°C (350°F). In a baking dish, start with a layer of marinara sauce at the bottom. Place 4 lasagna noodles over the sauce. Spread half of the cheese mixture over the noodles, then add half of the sautéed vegetables. Repeat the layers with another 4 noodles, the remaining cheese mixture, and the remaining vegetables. Top with the last 4 noodles and cover with the remaining marinara sauce and shredded mozzarella cheese.

Baking

    Bake the Lasagna

    Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

    Let it Rest

    Once baked, remove from the oven and let the lasagna rest for 10-15 minutes before slicing. Serve warm.
