1. Prepare the Trinity

In a large pot, heat a tablespoon of oil over medium heat. Add the diced onion, green bell pepper, and celery. Sauté until softened, about 5 minutes.

2. Add Garlic and Spices

Stir in the minced garlic, thyme, cayenne pepper, salt, and black pepper. Cook for an additional minute until fragrant.

3. Combine Vegetables

Add the okra, sweet yellow corn, confit tomatoes, red beans, and mushrooms to the pot. Stir to combine.

4. Add Broth and Simmer

Pour in the vegetable broth and add the bay leaves. Bring to a boil, then reduce the heat and let it simmer for about 30 minutes, stirring occasionally.

5. Adjust Seasonings

Taste the gumbo and adjust the seasoning with more salt and black pepper if necessary. Remove bay leaves before serving.

6. Serve

Ladle the gumbo into bowls and serve hot. Optional: Top with Gruyère arancini for added texture and flavor.
