1. Prepare the Grits

In a medium saucepan, bring 4 cups of water to a boil. Stir in the grits and salt, reduce heat to low, and simmer for about 20-25 minutes, stirring occasionally, until thickened. Once cooked, stir in the shredded yellow cheddar until melted and smooth.

2. Cook the Bacon

In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon from the skillet and set aside, leaving the rendered fat in the skillet.

3. Sauté the Shrimp

In the same skillet with the bacon fat, add the shrimp and cook for about 2-3 minutes on each side until pink and opaque. Season with black pepper to taste.

4. Add BBQ Sauce

Pour in the bourbon BBQ sauce and stir to coat the shrimp. Allow to simmer for an additional 2-3 minutes to heat through.

5. Assemble the Dish

To serve, spoon a generous portion of the cheesy grits onto a plate, top with the BBQ shrimp mixture, and sprinkle with crumbled jalapeño cornbread, crispy bacon, and sliced scallions. Drizzle with rosemary honey butter before serving.
